As the wines, the cheeses are various around the world. There are lots of differences among them too. From creamy textures to stronger ones, from the softer to the spicier, this wonderful universe of cheese inpire the wide possibilities of combinations.
We must consider its textures, flavors, but mainly and definetely the fat and salt.
Fat calls acid. Salt in big quantity, “fights” with the red wine, but it can harmonize with the sweeter wines. Sweet flavors, in general, go well with sweet and kind of sweet wines.

It suggests a fresh white wine not so intense, fruited with balanced acididity: White Saint Germain and Marcus James Chardonnay.

Little sweet, but kind of fat. Aurora Varietal Gewuxtraminer is recomended, or Marcus James Sauvignon Blanc.
At the same time, because of the structure of the cheese, some red wines can be good as Aurora Varietal Merlot and Aurora Varietal Pinot Noir, or Clos dês Nobles red. |

Humid with touches of green-blue. Strong flavor, almost salty. For its reason, it is suggested Aurora Colheita Tardia.

In Brazil it is a cheese with soft and a little sweet taste and texture.

This cheese is humid, white, soft, light flavor and a little acid.
If it is served with honey or fruit, Aurora Colheita Tardia or Aurora Moscatel.
If it is consumed before meals with salty appetizers, there isn´t the right wine, but it is not recommended red wines – even the lightests ones – and prefer a white wine, dry, young, less thick than others to not disappear on the taste.

It is very good with brut sparkling wines, specially when apreciated in the beggining of the meal, as the Aurora Brut Charmat or Aurora Brut Champenoise or Aurora Prosecco. |

It is a dry cheese, spicy taste. It calls strong wines, thick.
Options: Cabernet Sauvignon small parts, Aurora 75, Aurora Reserve Cabernet Sauvignon.
On the other hand don´t waste the brut sparkling wines with parmesan, even those white wines with a sour taste, specially for those who have a good taste.
Sour is good to keep the cheese good.
This sour exists in the thick red wines, but stronger in sparkling wines as Aurora Brut Charmat, Aurora Brut Champenoise, Aurora Prosecco, Conde de Foulcaud Brut, Marcus James Brut.

In Brazil, this cheese, from Italy, it is very known. Here, it is a little spicy and it has different degrees of smoked cheese.
The spicy comes with the processo f making the wine more mature. To this kind of cheese, red wines com a touch of wood, like Aurora Reserve Cabernet Sauvignon, or even the Small particles Tannat or Small Particles Cabernet Sauvignon.
